Ipswich Cider is made from apples from the Ipswich area. Many varieties are blended together to give a typical Eastern Counties flavour. Bottle conditioned to give a light sparkle. Serve cold and pour slowly.

DICK’s CIDER

Dick’s Cider is made from Dick’s apples, from a small village just outside Ipswich. Dick’s apples are cider varieties, which is unusual for East Anglia. These include Michelin, Kingston Black and Dabinett, which give Dick’s Cider a unique flavour in the Cydefx range. High in tannins, both bitter-sweet and bitter-sharp apples give a high astringency that mellows to a fuller flavour after fermentation. Bottle conditioned to give a light sparkle. Serve cold and pour slowly.

PERRY

Perry is made from pears from the Ipswich area. Because pear juice contains sorbitol, a non-fermentable sugar, it retains a residual sweetness not found in a fully fermented cyder.

PYDER

Pyder is made from apples and pears from the Ipswich area. The unusual name comes from the combination of both Perry and Cyder since it is a blend of both fruit. Pear juice contains sorbitol, a non-fermentable sugar, and so Pyder retains a residual sweetness not found in a fully fermented cyder.

FESTIVAL CYDER
